Adhoc testing will do once the build is ready and is migrated to test environment. Before SIT starts, through Adhoc testing, testers can find high severity defects (Showstoppers) and can stop testing at the beginning itself rather than continuing testing and finding defects in SIT. It could save Testing time.

The ad-hoc testing is here we come up with the creative senarious based on those creative senarious we performed testing. Example login page and session time out.
