User Acceptance Testing can be done primarily in two ways.
1. At the customer premises with set UAT environment
2. Simulated PROD environment which is very much nearer to the actual customer testing environment.

Keeping the above criteria in mind, it depends if the customer needs to prepare UAT documents, if they have already a QA team existing and then for sure they will be knowing how to write UAT documents.  If not, if your company is doing the UAT - your company QA team will have the UAT documents.  You can either share your resources or can train one of the admin person who is in charge of the project on the customer side how to use the application which itself becomes the UAT document.
